When they closed the doors of Reubens Restaurant in 1966 the only thing left to commemorate the 60-year-old institution was its justly famous cheesecake. It can still be purchased by mail. The Reubens apple pancake, however, disappeared, the recipe locked away in the files of Arnold Reuben Jr., son of the restaurants owner. Such a loss did not go unnoticed. And today there are still those of us who mourn the passing of that rich, sweet creation that was somewhere between a crepe and a regular pancake - even though concerns about health may preclude eating it more than twice a year. Savoring it one snowy midnight more than 30 years ago is one of my cherished gustatory memories.
