A New Image With Very Few Missteps
OUR eyes popped when we pulled up to the Chalet on a recent evening. The Roslyn landmark, which dates from the middle of the last century, had always resembled a quaint Swiss ski lodge. Now it is bathed in a red glow, is outlined in white flashing Christmas lights and sports a 20-foot American flag hanging from the side of the building. The interior has changed just as dramatically. The warren of small, beamed-ceiling rooms opening into one another used to be warm and kitschy with a lifetime of knickknacks vying for wall space. The dining rooms are still decorated with antique light fixtures, gold-frame mirrors and tapestries, but the look is now cool and uncluttered. The small room with the fireplace, which has been turned into a lounge, is another story. Think bordello. A Fine-Tuned, Engaging Hamptons Spot
PECONIC COAST is different. Many of the other new Hamptons restaurants, no doubt, are in a panic this weekend. They have been open only a few scant weeks (or even days) and now the hoards of summer people are upon them. Peconic Coast made its debut early last fall (where Dukes had been in East Hampton) and has had all winter for fine-tuning. That experience shows in the food and service. WE stood three deep at the bar, waiting for a table and asking ourselves why we were here. It was Saturday night at 660 West and the new Garden City restaurant was jumping. We were there because of Tom Schaudel, one of the Islands most creative chefs. His restaurants usually excel. He is the owner of 107 Forest Avenue in Locust Valley and the recently opened Lemongrass in Roslyn. Until a few months ago, he ran the highly rated Downtown Grill in Montauk. Restaurateur Adds to His Lineup
TOM SCHAUDEL, Long Islands restless restaurateur, has opened yet another worthy restaurant. His latest, Angelfish in Long Beach, joins Coolfish in Syosset, his flagship restaurant; Thom Thom in Wantagh, a steak and sushi place with an Asian spin that made its debut about a year ago; and the recently opened Rockfish in Huntington, which Mr. Schaudel compares to a fish shack. Angelfish takes over the quarters that were last home to the short-lived Magnolia & Park (also known as Milans) but are best remembered for Tkops 180, a casual American bistro.

Japanese? Just When Sushi Is Sampled
THE Seafood Barge is still the best restaurant on the North Fork, just as it was five years ago when I last visited. The casual fish house with its snappy navy blue and white color scheme, mounted swordfish and sailfish and expansive windows offering views of Peconic Bay and boats moored at the Port of Egypt Marina looks much as it always has. But the restaurant has not stagnated. For one thing, sushi has made the scene. Sushi in rural Southold? Yes, and its terrific. The artful presentations are the work of David Huang, the sushi chef. The night we sampled his creations, I had to persuade a friend to try them. She was skeptical about ordering sushi at a non-Japanese restaurant. Yet, when the gorgeous hand rolls arrived (California and spicy tuna), her fears were more than put to rest. This is not your run-of-the-mill sushi, she said.
Steady Hands on Seafood Barges Tiller
CHEFS are notoriously nomadic. The résumés of some of the top toques read like travelogues. Pity the poor restaurateur, still basking in the rosy glow of rave reviews, who finds the kitchen magician who garnered those plaudits already packing his bags. Either through good luck or good management, though, some owners find a new chef as good or better than the departing one. Dick Ehrlich, the proprietor of the Seafood Barge in Southold, is a case in point. In 1994 he hired Brian Schlitt as chef, and the two men turned a longtime marina-side fish shack into a dining destination. Mr. Schlitt eventually left to open his own restaurant. Last season, cooking honors were shared by Jim Slattery and David Huang, the sushi chef. Mr. Huang is still turning out marvelous raw fish creations, but Mr. Slattery has departed..
